Francois Gimeno founded Chemins de Bourgogne in 2009. Following his retirement in 2021, Eve and Sébastien took over this small business to carry on his legacy of guiding guests through our wonderful region, its wines, and its history.
As a Curnonsky Hospitality School graduate, I have always worked in the world of wines and gastronomy, including in London and Paris for Pierre Gagnaire (and others), before opening a wine bar in Pommard, Burgundy.
I am friendly and a real wine addict, ready to take you into the vineyards for an amazing experience, or organize a special and personalized wine tasting at La Cave du Palais.
After graduating from Institut Paul Bocuse, I had the chance to work in prestigious hotels in South-East Asia, work in two bakeries in France, and a Crèpe restaurant chain in New York.
